There is nothing more special, I think, than white truffles shaved atop a hill of buttery tagliolini. On November 23, Eataly in NYC had a sale of Urbani white truffles for $110/ounce instead of $168. My family and I purchased a modest-sized tuber, some tagliolini and headed home. I cooked the tagliolini, reserved some of the water and threw the pasta into a skillet with some butter and a light shaving of Parmigiano Reggiano. After tossing the pasta in the skillet using tongs, and when the butter coated all of the pasta, I plated the pasta and shaved the truffle on top. I trust the photo in describing the magnificent, earthy taste.
