This is by far one of the best pasta dishes I have ever made. With sweet caramelized onions and tart goat cheese, this dish was easy and delicious. The directions are as follows: Julienne chop two or more white onions. Cover the bottom of a pan with olive oil and a tablespoon of butter. Throw in the onions and cook them in olive oil for about about 40-50 minutes at medium heat. At 10 minutes, season the onions with salt and a pinch of sugar (to help with the caramelization), stirring every few minutes to sweat the onions. If the onions start to dry, add a bit of water. At around 40 minutes deglaze the pan with balsamic vinegar and scrape the bottom of the pan to pick up all of the flavorful bits. Once the onions look ready, mix them with some goat cheese and heavy cream. Add the mixture to cooked pasta and add some Parmigiano Reggiano and ground black pepper. Enjoy!
