What better way to use leftovers than to make a sandwich? Today for lunch, I bought a country loaf of bread and made an open-faced sandwich with chicken Milanese, marinara sauce, mozzarella, and a drizzle of balsamic vinegar. I garnished the sandwich with sautéed cherry tomatoes, garlic and basil.
